Saw this on YouTube a couple of years ago and started cutting the rib cage out this way. It doesn't take much extra time and adds a couple of bites to each Fish. Doesn't seem like much but it adds up. Still boneless too!

That's how I do it. Should look like an oven mitt.

I had some crappie the other night. Ohhhh, it was so good. That almost looks coconut battered.

I fry up the rib cages and eat them so nothing is wasted The wife and kids eat filets and I fill up on rib cages. Lots of meat on them.

However you filet and cook them, they sure are good. Had a batch of fresh filets and some tater salad last night.

I even slice the thin layer of meat off the ribcage. It's really crunchy when fried up.

good looking filet job right there! as for the rib cages, I fry those up as well....I call them potato chips....just like eating the tail of a crappie fried whole, or a perch.

fry mine whole most the time, the way my grandparents cooked fish. My grandfather showed me how to clean a bullfrog, not just cut the legs off
