when frying crappie, do you put salt on the meat or in the corn meal before cooking?

I use Tony Cachere's on the fish before I put them in the corn meal. I like it better than just salt.

Try this without corn meal, we have been eating fish at home this way for years. Very good. FRIED FISH
Plastic bags (doubled)
2 cups Flour Onion powder good shake Garlic powder good shake Salt mild shake
Mix above in bags, then shake fish pieces a few at a time

A chef once told me to NEVER season fish before frying. He said to put the seasoning in the batter, or better yet...season it as soon as it comes out of the grease. It sticks that way. I've done it that way ever since. IMHO.... If the fish you are cooking is good quality like crappie and fresh, it shouldn't need much seasoning anyway.

Marinate in hot sauce, then Zatarans fish fry, WOW!! I dredge mine in sirracha and then coat with a cornmeal/salt/pepper mix. Very tasty. Not hot at all.

I do it many different ways...but applying seasoning when the fish is just out of the grease works best for me...but the real answer to your question is .."tarter sauce"..
The driving force and secret desire of every bass fisherman, is to one day be a crappie fisherman............Could it be that the good Lord just smilies and looks the other way when a fisherman tells a lie?

For a light, crip, non greasy filet use white corn meal. Soak fish in cold water. Pat dry then place in bag with white corn meal seasoned the way you like it. I use season salt, onion and garlic powder, lemon pepper and black pepper. First had this in a cafe in south Louisiana that served it at breakfast with eggs. The old black lady who ran the place gave me the recipe. Give it a try if you like a light batter.

If you like them crunchy, roll the fish in an egg wash then roll in Kelloggs Corn Flake Crumbs (found in the baking isle). To me, it beats corn meal by a bunch.

Salt it after you take it from the oil. The salt sticks to the oil then.
