Pan fried steak;How to?

The wind is blowing nasty here and knocked out my gas grill 3 times so I had to bring my steak in and try pan frying.
Any tips for next time? It will be to late for this one...

I would imagine someone will chime in here in a short with a sous vide/ boiled meat in a bag recipe for the save and win

First step, open all the windows.
Cast iron skillet screaming hot with a little crisco. Sear it well - 3 minutes on each side.
Add a couple ice cubes to the pan and put a lid on it for three minutes. Done.
I like mine mooing - blue - very rare. Learn the touch test for determining steak doneness.

Lard will taste better and smoke less. And better for the skillet. Yep. Totally agree. But people are twitchy about even having lard, much less using it.

put empty cast iron skillet in oven. heat to 400` when temp reached sear both side of steak with olive oil, put back in oven for 7 minutes or more depending on thickness. Top with pat butter when out.
Just want to make folks smile, and spit coffee on their keyboard.
If you put beans in your chili, you don't know beans about chili.

6oz filet last night. Cast iron skillet on high, olive oil and butter, sear 2 min each side, transfer skillet to oven at 400 and cook 6 mins for med rare. Was excellent.

Olive oil has a very low smoke temperature. You're going to burn it.

Olive oil has a very low smoke temperature. You're going to burn it. Didn't happen to me

Heat an oven to 400, cake your steak in salt and cracked pepper, sear in piping hot butter with a splash of olive oil for 1-2 minutes on each side. Put skillet in the oven for 7-9 minutes, usually comes out perfect rare- medium this way depending on the thickness of the steak
