So what are you guys doing with all this wind? Every time I have a day I can get away to get on the water it 15-25 mph. So frustrating.

I try to fish a lake that has a cove that at least one side is protected from the wind. I fished Ray Roberts yesterday in the wind and had no issues in Buck Creek. I hate the wind but have learned to deal with it and respect it. You need to be flexible and adjust as necessary, which isn't always easy.

Superslab has the right approach.
North Texas is very windy especially over its spring months. I panfished today (see my big bluegill under the bluegill section!) and what I did was I left the bank near Lake Athens' boat ramp, crossed over in the no wake zone and I fish along and in between the boat houses. I could actually position myself out of the wind, had no issues at all holding water in my Propel 10.
Later, I fished under the 2495 bridge for a bit, also a good hiding place, then I left there and I let the wind "push" me down a long bank where I could make repeated short casts to the edge of the grass, never pedaled once.
Coves are great, too, especially if one or both sides are high and the wind gets directed overhead.
Another location I like is whenever the wind is blowing over the dam, I'll get just below it and fish the rip rap where the wind goes over me.
On Wheeler Branch, there is a small rock island and if the wind and current are big, I like to get on the leeward side of the island, drop an anchor and the island cuts the currrent, redirects it left and right so you find yourself in a little bit of dead water.
Finally, another trick is to pull up on top of a pad of vegetation as it acts as a wave arrestor. You can sit there and fish over and along the edge. Or just pull up to a nice shoreline and hop out of the kayak and fish from the bank.

One of the most consistent patterns I have found is fishing the "edge" between rough and calm water. Just remember and be safe and know your kayaking limits.

So what are you guys doing with all this wind? Every time I have a day I can get away to get on the water it 15-25 mph. So frustrating. I take days off for calm days (and work weekends, if need be). Or go to saltwater, I can fish it in 15-20mph winds.

I try to launch where the wind will be at my back on the return trip and have had some really great days throwing at windy banks.

When it's as windy as it was this weekend, I'll fish the local ponds. That leaves a lot of time to do work around the house, errands, do maintenance on reels and kayak, etc. so I don't feel so bad if I spend an entire day on the water when the weather improves.

July/August is tough. The trick I have found it to get out really early, then get off the water by about noon.
Don't over-extend time on the water because you need to preserve some for getting back off the water.
And, afternoon fishing is great if you go get over on the shady side of something, or on the shady side of a bridge. Then, once the sun drops low, you have some spectacular 2 or so hours of fishing.
