I will be fishing as a co at lake champlain later this month. my question for you guys is this; what do i bring?

everything in the boat and ask the pro what he plans to use that day and bring just that gear with me? how much tackle do you normally bring with you on to the pros boat? (in number of plano boxes)

Talk with your boater prior to the tournament and find out what kind of fishing he will be doing and adjust accordingly.
I have a plano bag that holds 6-7 3700 boxes but I rarely carry that many.
Too much stuff will just get in the way and slow you down IMO.

Limit yourself to 4-5 trays. For instance: Two trays of hard baits; top and shallow in one, mid and deep in the other, a tray or two of jigs/spinner/buzz/frog, and a tray of terminal tackle. Bring collection of appropriate plastics, tools, extra line, etc. 4-5 rods max. But of course, talk to your boater!

Talk to the boater beforehand. I think a safe bet would be three rods. A med with mono,med heavy with flouro, and a heavy with braid. Then bring a small about of stow aways and plastics. You can cover everything needed and take up minimal space.

Are you talking about Lake Champlain in New York? That's typically smallmouth country with light lines and light tackle. Better get some local knowledge on baits before you go. Also take a look at previous BASS events up there and see what worked on those tournaments.

I assume you're talking about the FLW Tour event on Champlain? Here's what FLW rules say about what you can bring on your pro's boat:
" Co-anglers are not allowed to have more than seven rods, one tackle bag and one foul-weather bag in their pro’s boat on any day of competition."
Talk to your pro the day before and adjust accordingly

Just fished the bass open as a co. I researched what the common method of catching them was. I took 4 rods with me, one reaction lure and the rest plastics and jigs. Three boxes, one with jigs, one with reaction lures, one for terminal. A few bags of plastics and rain suit. No need to take a full arsenal of stuff.

Ask the pro before hand what depth your fishing so you know what to take.

You'll leave your house long before you get to find out who you're fishing with. I typically do a bag that holds 5 and then soft plastics. You'll need 6 or 7 rods because you don't know what you're going to need. Even if you read reports on the lake, sometimes you need something else because your pro has a different pattern or spot.

Buy a Vermont license when you get there. Good luck!
