What is the biggest difference with the props. I have a Mercury pro xs 250 with the standard mercury 26pitch prop. What gains could I see with a fury 25p or something simular? 20' Triton. If it's speed, how much? If it's bow lift, is it noticeable? Teach me.

Go to Bassboatcentral.com and go to the Triton boat forum. There you should find your boat and engine and how the different props performed.
This is a very big question with a lot of variables.
Good luck,
PS There is no standard mercury prop. It will be helpful once your on that forum to know what prop exactly you do have along with prop to pad measurements.
