How do y'all like to cook squirrels..I prefer smother fried with gravy and rice....but would like to explore other possibilities.

Never have had a tree rat. Are they that good for the little meat on them?

My favorite was fried in a cast iron skillet that my grandma in Indiana cooked. And the gravy she made out of what was left in the skillet. Sort of like southern fried doves with the mushy breading. I never learned how to do that and make the squirrels tender.

I'm told the little young ones are the best for frying but her's were whatever size my grandad and uncle brought in.

I had some in Chicago one time a guy brought to the jobsite. He'd cooked them in a crockpot in barbeque sauce - those were tender and tasty. I tried some on the grill and they turned out tough and dry.

yes sir they are very good... squirrels have a unique flavor and texture that I enjoy...some can be rather tough while others are fall apart tender...it's all in how you cook them.

sounds like your Grandma knew what she was doing...that's basically what I do ,only I use a pressure cooker to make them really tender..if you want to chicken fry them you can pressure cooker them for about 15 or twenty minutes and then batter and fry them...or you can batter and lightly fry them first then put them in the pressure cooker with some broth let them cook for about twenty minutes..sort of makes its own gravy...that's my favorite way...that's also how my mother did deer steaks and gravy .

I make squirrel stew out of mine (usually about 4 whole squirrels gutted and skinned). I put them in a big pot of boiling water and boil until the meat starts to fall apart and off the bone. Pour water out and let them cool off so you can handle them like pulling pork. Next, make your stew mix with potatoes, tomatoes and anything else you like in stew. Then start pulling all the meat off the bone and mix in well. Cover and cook until all the flavors come together. You can do the same with rabbit too.

rabbit cut up and in the brine now. gunna cook it tomorrow,freeze and take to the deer camp fri night. been thinking about it since reading this thread.
