Just had this last night. A fishing bud gave me this
recipe recently. Mmm Mmm good !


White Bass Parmesan

Or other fish

2/3 cup finely grated fresh Parmesan cheese
3 TBSP Mayonnaise
2 ounces (4 TBSP) softened Butter
2 TBSP fresh Lemon juice
1/8 tsp black pepper
1 TBSP Uncle Chris Fish Seasoning (or Uncle Chris Steak Seasoning as an alternative choice)

1. Cover a baking sheet with aluminum foil,
spray with Pam. (Preheat oven on broil)
2. In small bowl, combine all ingredients and
stir well until mixed. This will make a spread
consistency product.
3. Coat fish with thin layer on bone side, place on
foil, and broil on first rack (around 6 inches
from heating element) for 7-8 minutes or until
browned.


Notes -- This will make enough spread for at least 15 to 20 white bass filets.
Spread a thin layer on the bone side of the filets with back of spoon. Place
filets skin side down on Pam sprayed foil. Left over spread will keep in the
fridge for a good while.
