Just got back from Cabo with a lot of yellowfin tuna and have never grilled it before. We had some cooked for us while there. They basically oiled it, salt and peppered, hot grill four minutes per side. It was great.

Any suggestions or don't do this suggestions? Thanks.

no wrong way except OVER cooking it ,if you must cook it .

coat with olive oil, salt, pepper and garlic powder. grill 1 1/2 min on each side. works every time.

Hey Terry, I hate to sound like a nit-picker, but do you mean California yellowtail, or yellowfin tuna? If it's the former, then recipes for amberjack will work quite well, as they're very closely related.

But, if you do mean yellowfin tuna, then just ignore me and carry on.

No I did not. I saw the cleaning guys keeping them for themselves though. I found out later that they were good eating. for sure will next time.

The guys that cleaned our tuna down in Venice were going to use them for crab bait.
