Baked Mustard Bass

1) Cut the fins, tail, head off.
2) Cut a piece of aluminum foil and rub it with oil or something that will keep your fish from sticking.
3) Place bass in middle.
4) Slather your bass with Yellow Mustard. Add dashes Salt & Pepper to both sides.
5) Fold aluminum foil and fold the ends to create an "aluminum packet". Don't double wrap. One piece over the fish and one piece over the first fold then fold in the edges is enough.
6) Refrigerate for at least 30 minutes to 2 hours. I left mine refrigerating overnight and ate it for lunch the next day.
When ready to cook; leave bass out of the refrigerator. While bass warms up:
7) Pre-Heat oven to 350 degrees.
8) Place bass on cookie sheet or pizza pan.
9) Cook for 30 to 40 minutes minimum. I cooked mine for about 50 minutes because it was still cold.
10) Open aluminum foil to expose fish.
11) Put oven into broil and cook top of bass. Broil until desired color is achieved.
Bass is good with Salted Crackers. I ate it with my fingers and a fork. I didn't even give it time to cool let alone get crackers.
Goes good between a bun or with tea/lemonade.

No, I thought it was understood that you have to scale and clean their guts...
I just cut the tail, the fins, and the head as well. If you have ever fried a fish it is usually fried with fins, tails, head.

I like to take a 1/2 pound bass - dip the whole thing in mustard uncleaned.
roll in flour - deep fry and eat the whole thing...amazing- make sure the tail is crispy and your are good to go.
Whether you think you can or you can't, you are probably right.
