I love ceviche. I used to make it with hybrids because I think it's the best way to eat them. Then everyone started saying you shouldn't make ceviche with freshwater fish because of parasites so I quit. But saltwater fish have parasites too. Redfish and trout are loaded with worms, for instance. Can anyone tell me definitively why freshwater parasites are so much more dangerous than saltwater ones. Or is this one of those things that got said, then repeated until everyone thinks it's true. Thanks.

i would think the lime juice would kill off the parasites in any fish. hope someone with actual knowledge answers up cause i too love it. sheepshead or redfish is my favorite, but i'm really wanting to try bay scallops in it.

Freshwater fish have more parasites and worms like tapeworm. The worms you see in specks are not harmful but I prefer to use clean filets anyways. If you're not sure, just cut up your fish and boil for two minutes, cool down in ice water, add to ceviche mix and eat it with out having to let it soak for very long.
