This was my first attempt at making a breakfast casserole and it was excellent. Got the recipe from my grandpa-
Coat the bottom of a 9x13 pan with crustless bread (about 6 pcs) Mix 5 egs, 1 pound browned sausage, 1 cup of milk, 1/2 onion, 1/2 bell pepper, salt and pepper in bowl Pour over bread Add about 1 pound of shredded cheese to the top Cook in oven at 350 for 40-45 minutes

I make one that is very similar to this but I put ham and bacon (cooked) into it as well. Just another tip, if you coat the bottom side of the bread with a very thin coat of butter or margarine, it will come out of the pan much easier.
It also works if you put all of it together the night before and put it in the refrigerator. Just take it out the next day and let it come to room temp before sticking it in the oven.

I also add some grated cheese 5 mints befor I remove from oven That what I do, I also add cooked mild sausage that I have fried. And it's good, even next day if any left over.

^ Good call. I do brown about a pound of sausage and mix it in. I'll add it to the original post!
