Start 2 cups whole milk in a saucepan over low heat and whisking constantly, add in the mixture below beaten together.
3 large eggs 3 egg yolks 1/2 c sugar 1 teaspoon vanilla 1/8 (pinch) of salt
Bring just to a simmer and pour in to a warmed, prebaked crust.
Bake at 325 for 25 - 35 minutes until the center is quivery. Let cool, and then refrigerate 1 day. Pull out and let warm on the counter to room temperature before serving.

To make coconut custard pie, add 1 1/4 c sweetened dried coconut to the pie crust and pour the custard over it.
