I love crappie fried in beer batter, but I'm looking for a good recipe to try that doesn't require frying.

There are many. You can look up about any recipe for baked fish and crappie will work just fine. You can wipe the bottom of a baking dish with some olive oil, lay down filets, season lightly no salt though, and then sprinkle some crushed frenchs onions on top.

Fast and simple..! George Foreman electric grill....
easy...get your frozen crappie fillet direct from the freezer..plug in grill to electricity..
spray small amount of -spray olive oil- on top and bottom --inside of grill...
lay frozen fillet on grill cook surface..season a little to your taste..I do not use any seasoning spices....
close grill lid to cook...light goes off...it is ready to eat..remove from grill..squeeze a little fresh lemon on fillet..
thats it..ready to eat..takes less than 5 minutes to cook.
no frying...no mess...no fish smell in house either..and very healthy!cook sand bass this way with no fishy taste at all. food

Get yourself a "BigEasy" from CharBroil. It cooks with convection heat, and is propane fired. Makes the best crappie fillets in 30 minutes you have ever eaten, and no frying. They are crispy though, just like fried.

I had a friend who smoked crappie that was incredible but I don't have a recipe.

I'm partial to red curry stew.

4 tablespoons red curry paste
1 red bell pepper jullianed
1 medium onion sliced
1/2 cup of bamboo shoots
1/2 cup jullianned fresh basil
2 cups coconut milk
3 tbs butter
2 lb crappie fillets

In a large skillet on med-high heat, saute the bell pepper and onion in the butter until it starts to get limp.

add in the bamboo shoots and curry paste and combine well until heated.

Add the coconut milk and and combine until well mixed.

Lay the crappie fillets in the mixture to poach.

When the fish is done where it flakes with a fork, serve over a bed of rice and garnish with the basil.
