I have a 91 Cajun with 200hp, just wondering if these stingray hydrofoils work, and which one would be best. My holeshots are in the double digits even after a custom prop, Thanks

Sometimes a hydrofoil makes things worse. If you have a 200 h.p you should have plenty of horse power to get on plain. I would look at your setting on your jack plate if you have one, The top of your prop should be about 2'' above the lowest part of your hull (good starting point) Second sounds like you need more cup in your prop and less rake.

I fished out of a 16' astro when I was in high school-(and several years after) I installed one and it helped- But it had a 60 hp motor- I am sure hawk is right-

My experience has usually been, a hydrofoil is a last ditch effort to "fix" a poorly set up boat. Poorly running motors, wrong prop, wrong motor height, poor weight distribution in the boat, wrong setback, etc...are your culprits and a hydrofoil just tries to treat the symptom without trying to determine what is causing the disease.
