Hopalong: The recipe my uncle told me about went like this:

Skin Possum
Split carcass down the middle
Add a brick, taters onions and any spices that you like. Wrap possum in tin foil
Dig hole and start fire with hickory wood, after fire has heated and only coals remain then add wrapped possum to coals
Shovel dirt back on firehole and let set for 24 hours
Remove possum from firehole, remove tin foil
Take brick and veggies form carcass
Throw possum away and eat brick!!
