What are y'all cooking?

Looks like the menu at the casa will be:

PREGAME/FIRST HALF:
-Bacon wrapped dove, with onion, pepper jack cheese, jalapeno with a chipotle raspberry sauce

-Jalapeno poppers or ABTs whatever you want to call it, with spicy sausage, cream cheese, onion

HALF TIME:

-Seafood nachos with shrimp, pico de gallo, 3 cheeses - mexican queso quesadila, pepper jack, white cheddar, maybe a lump crab salsa topping.

SECOND HALF:

-Kobe fajitas with all the trimmings.

dang i can't wait! grill

The bar I frequent is a sports bar. But this year they said they are gonna have stew. Yeah thats what I thought, STEW????? Stew is not a superbowl meal. You gotta hace something grilled or fried. Not stew. Might have to find me another location to watch the commercials, err I mean game. What do yall think about stew for the big game?

Stew for the super bowl? Meh I'm more interested in something grilled or fried, finger foods and snacks. For us, it's more fun to "graze" off and on all day vs a single meal.

Queso

Boudin balls

stuffed jalapenos may do some shrimp and some with Earl Campbell's hot links, cream cheese mixed with dry fiesta ranch seasoning. Bacon wrapped of course.

Huge vat of my awesome chili.

CHICKEN WINGS...lots of them with probably 4 or 5 different sauces.

Fresh made potato chips.

Chips and dips (three different kinds)
Sliders - marinated in teriyaki sauce, topped with pineapple.
Chicken wings - on the smoker, finished off on the grill
4 different kinds of ABT's
--cream cheese with shrimp
--cream cheese mixed with lump crab meat
--cheddar cheese with jalapeno sausage
--blue cheese with pork/onion sausage
smoked sausage...

I think that will do it for today!

We have a special recipe of things we cook for Super Bowl Sunday. We have about 40 people over.

Pheasant - Marinate in Tony Chachere's
Deer Back-strap - Marinate in Tony Chachere's
Chicken (For Non-Wild-game People) - Marinate in Tony Chachere's
Dove - Marinate in Tony Chachere's with Tiger Sauce

Pheasant, Chicken, & Deer - Slice of Jalapeno, Slice of Monterrey Jack Cheese, Wrap in Bacon w/Tooth Pick, & Dip in Zatarain's Lemon Fish Fry. Then Deep Fry for 2-3 Minutes.

Hot Spinach Dip. Jalapenos cut in have and seeds cleaned. Then we mix Cream Cheese, Shredded Cheddar Cheese, and Real Bacon. Mix that up and stuff the half sides and bake at 375* for 30-45 minutes.

Dove - Slice of Jalapeno, Wrapped in Bacon w/ Tooth Pick and Grill.
Then everyone else brings their best appetizer or dessert. We usually have an assortment of dips and chips. Along with cookies, brownies, and cakes/pies.

Still trying to decide what we want to do. Weather so pretty and all. A restaurant client is closing his place at 5, for a private party, to which I'm invited....but I spend so much time there as it is, I'm not sure I want to go for any reason other than PR. It'll only about 30 close friends, but still.....the weather is nice outside, so I'm torn. Need to decide soon, cuz I'll be cooking some chicken and sausage Jambalaya to take.

Do you make the fajitas on a grill or in the kitchen?

If it's in the kitchen, how do you cook them?

I've also made them on a grill pan when it was super cold once.

That's what I was thinking. They cook so fast I wouldn't think it would be that big of a difference.

Chicken hit the rotisserie on the grill just a bit ago. Assorted veggies and taters sitting right under it just catching all that good juice while it cooks.
