Both yaks are at the leading edge of kayak and fishing design fusion. Both websites will tout the various innovations, so I'll leave that to them. For the most part, the Coosa is a better performing yak, while the FH12 is a more stable yak.
With that said, let me make a few points. For paddling performance, the Coosa handles a bit better than the FH12. It maneuvers better and responds better to paddle strokes. It can handle up to Class III whitewater. It also has better storage opportunities, with 2 storage hatches accessing the inside of the yak, and a rear tankwell. It's also lighter, and doesn't have any moving parts critical for on water safety.
Where the FH12 really shines is stand-up stability. When you extend the pontoons, you're basically on a boat rather than a yak. Not only that, but it comes with a casting brace for even more stability.
If you plan on standing sometimes or less, go with the Coosa, because the on water performance, more flexible storage, much more supportive seat, and less moving parts makes it the better option. However, if you plan on standing often, the FH12 is the way to go because even though it sacrifices a few things, it kills the competition in the stability department.
Considering your back, I would really stress test driving each one, because of the large difference between the 2 seats. We have the Coosa available for free test drives everyday we're open at our San Marcos location. However, we don't have a FH12 available, mainly because we don't sell many. 98% of people who stress they want stability find that they actually prefer speed, and find out that higher performing yaks still have the stability they're comfortable with. You're not too far away, come check us out, there might be several other yaks that may work for you.
