Seasoned a rack of ribs last night. Got the fire going in the smoker at 7:30AM. It's now leveled off and holding at 225. Ribs went on at 10:00. Think I'll give 'em about 5 hours unwrapped then wrap 'em for a couple more.

T-man, I wrapped mine about 30 min ago. Gonna let 'em slow cook until the wife gets home at 4:30. Then it's time to get our grub on. I'll post pics. Mine were looking pretty tasty when I wrapped 'em.
Dad gummit but your ribs looks good.

Have any of y'all been doing beef ribs? I love them but they seem to get harder to find at the limited grocery stores here? I prefer beef ribs over pork ribs. Yep, hard to find. Can't find them in my area.

Having chicken breast strips wrapped in bacon and then rolled in brown sugar and baked ... ready now ... you'll get my review if good!

Do you cook beef ribs same as pork ribs-i.e. 225degrees for 4 or 5 hours? Haven't cooked beef ribs in years. Seems like I grilled 'em more like steaks.

A few of my friends and I had a big cookout yesterday. Pork ribs, pork butt, venison backstrap, brisket, sausage and beef short ribs. I can still smell the smoke on my hands.
