Wow - horrible. The sauce was too tomato-ey, the pork ribs where tough and no flavor and the brisket was mediocre at best. I'll give them the charred potatos where nicely done and the beans were good.
I don't post much on here but felt this was worth my time to tell people to spend your money elsewhere.

Only good things at Bill Miller's are the fried chicken and the bread. I like the green beans, but some don't. Sad things to say about a "BBQ" joint!

Only BBQ I've eaten that was worse is from Jerry Mikeska's place out West of here on I-10. Bill Miller is a close second.

It's fast food BBQ, everything is cooked in one location and shipped to each store. i'm wondering just what exactly you were expecting...? That being said, I'll gladly go in there for a quick lunch break when I'm craving some brisket and sausage. To compare to the likes of true smoke houses is just... why would you? Their fried chicken is awesome though, you can't argue with that stuff.

I'd think that fried chicken cooked in one place and sold in another wouldn't keep it's crispness. Is is sort of soggy like KFC's original recipe or something?

Always have liked them. Sad to hear that they're going downhill. I haven't been to SA since July.
Its fast food barbecue, but it was always reliable, and sad to say usually better than most real "barbecue joints" you find up here in north Texas.

It's fast food BBQ, there is no going any lower than that. Hell the CEO of Bill Miller's said "We sell sweet tea, & give the BBQ away." He is correct, they do make the best sweet tea. It's one of the few things I miss about living in San Antonio. Do they still have those giant mugs, where you can get the refills real cheap?

Is is sort of soggy like KFC's original recipe or something? they're chicken is already breaded, pre cooked (maybe?) and then flash frozen and bagged. it gets delievered to the store frozen and it is fried in house. the BBQ though is smoked in one location and distributed to the fast food chain and is then warmed up, chopped up and served.

I'm 55 years old and grew up in SA. I remember riding my bike 2-3 miles with my brother and a friend over to Bill Millers BBQ on West Ave and Jackson Keller about 45 years ago. Even as a kid I NEVER thought it was that great, somewhere between good and mediocre. But it was always consistent. It still tastes the same. Brisket, sauce, beans, cole slaw, onions and pickles, iced tea, all still taste the same after all these years. Not great, but not that bad either.
