I love to smoke on my little old rinky dink Brinkman smoker and have gotten pretty good on a lot of stuff. Me and the wife really like fish and I have started doing some expieriments on smoking fish. I have done real good so far but am looking for tips from anyone who also smokes fish. One of the best so far is some fillets I have done recently in a foil boat using some butter, salt, pepper, cayenne pepper sauce and putting a light coat of paprika on the fish. I smoke if for an hour or so and then close the top of the foil to finish cooking. Came out great. Also have done some Salmon with a Raspberry Chipotle sauce. Also some Tilapia covered in dill, onion and lemon slices. I have been using Pecan wood since it doesn't seem to give a real strong smoky flavor.
Any tips would be appreciated.

Smoke two or three small fish filets til there cooked and smokey.

Set out one block of cream cheese to soften.

To the cream cheese:

2-3 Tablespoons of finely chopped onion
1.5-2 Tablespoons of whoshire sauce
2 Tablespoons lemon juice
Tablespoon of chopped garlic
1-1.5 cups of flaked smoked fish
Mix well in a bowel and let sit overnight for the flavors to blend.
Several ways to serve.....For partys we roll this in flour torteas and cut them about two inch sections with a tooth pic to hold it together. Great on crakers and makes a good sanwhich.

Thanks for the recipe. One thing I love to do is take leftover fish and make a fish salad for sandwiches etc. so I am looking forward to making your recipe.
One thing I also discovered from a family member is using a recipe like yours in my stuffed jalepeno's. I cut them in half, fill with a fish salad like yours, add a piece of cheese on top and heat them until the cheese melts. Tuna fish also tastes good like this.

I also have been know to add some very well smoked shrimp to that recipe. Good stuff...just make sure you smoke it long enough for the cutees to die!

I'm from Northern California. We used to smoke salmon all the time. Awesome. I remember when the salmon were running up the Sacramento river back towards Shasta Lake they would have to cull them out and they would bring truck loads of salmon into town to get rid of them. Miss that so much.
