Does anyone have a recipe for cooking "sweet bread"? Most will probably not know what it is. It is a meat. I usually just slice it thin and fry it, but was trying to find other methods of cooking it.

Thanks JIM

Sweetbreads are the thymus gland or pancreas of a calf or lamb. Never had it myself but I've heard they are good.

Par-cook them in a gallon of boiling water mixed with 1 cup of vinegar for 8-10 minutes. Shock them in ice water to stop cooking. Toss them in olive oil, pepper, lemon juice, garlic and dried oregano. Thread onto skewars and grill like kabobs. Use extra marinade as a serving sauce and maybe a greek yogurt and cucumber salad and flat bread.
