Pound of ground meat
1/2 bell pepper minced fine
1/2 onion minced fine
teaspoon garlic powder
1 egg
1/4 sleeve of saltine crackers crushed
1 egg
1/4 c ketchup
tablespoon worstershire
teaspoon mustard powder
salt and pepper
Mix everything well and shape in a loaf in a roasting pan that allows the fat to drain into a tray beneath the meatloaf instead of sitting in its own grease. Paint with ketchup before baking.

Bake at 350 for about an hour.

This is one of my everyday recipes, and as such isn't exactly written down, also things are added and omitted at a whim. A few slices of bacon under the layer of ketchup is great... and its even better when you mince the bacon before you put it on. A dash or two of hickory smoke is really good, as is a little paprika. Ground venison works better than ground beef in this in my opinion as its more flavorful and less fatty. Play with it and see what you can come up with. Ritz crackers or breadcrumbs work in place of the saltines but that's usually what I have on hand for cooking and they're cheap.

I made one for T Man and it sounded like he loved it as much as everybody on here loves his brisket.

Whatever you put in it, after you form the loaf, fully wrap it in bacon. When the bacon is done, the meat should be too.

I smoke mine though.

This is almost exactly like my recipe I use that was my mom`s. I fixed it last week and it was awsome.

Here is a venison meatloaf recipe that I make quiet often.

Rick's Bat Out Of Hell Meatloaf
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 pound Ground venison
1 pound pork country sausage
3/4 cup Diced onion
1/2 cup diced green bell pepper
1 cup saltine cracker crumbs
1 can diced tomatoes
2 each egg
1 teaspoon Dijon mustard
1/4 cup milk
1/4 cup ketchup
4 slices bacon
1 cup Fresh sliced mushrooms

Preheat oven to 350 deg F.
Combine all ingredients except bacon, mushrooms, and ketchup. Place in a meatloaf pan.
Top with mushrooms followed by bacon and brush on the ketchup.
Bake for 1 hour. Check internal temperature. It should read 165 deg F.

2 lbs ground meat (hamburger or hamburger/turkey mix)
1/3 C catsup
1 C bread crumbs
2 eggs
1 pkg lipton onion soup

mix it all together. form into a loaf. plop in a loaf pan or baking dish.

Cook at 350 for an hour or until done.

A neighbor made one like the above, but he had some grated up carrots in it. First time I had carrots in meatloaf, but it was really delicious.

BBQ sauce may be your choice for meatloaf, but NOT mine.

I don't know if anyone has tried this but thought I would throw it out. I tried smoking a meat loaf this past summer and now it is almost the only way I will have it. Used pecan wood and it really gave it a great mild smoky flavor. Meat loaf and mashed tators are one of my favorite meals along with the next days meat loaf sandwich.

HA! After reading the Subject matter, I decided to throw MY OWN recipe into the hat. But soon after I started reading the already posted recipes, I got stuck on "Longeyes" where he says "fully wrap it in bacon". And now all i can think about is, BACON!!! ....so I gotta go make a meat loaf RIGHT NOW then get back to you with MY (maybe new) recipe which now may have to include Bacon!

Get back with us after you try it. Like I said, I smoke mine, but Im sure in the oven will be hard to beat too.

Smoking meatloaf is the only way to go. I prefer hickory though...
