What's your favorite way to cook these delicious little guys? I just dip in milk and egg, then roll around in a flour/meal mix 50/50, with salt and pepper. Just wondering what else is out there? I heard one that requires you to pat the filets dry, rub in your dry mix then coat w/ mustard and fry?! Sounds nasty but it's supposed to be awesome! Any way, looking for some different ideas...

my favorite is damp filets rolled in corn meal flavored with lemon pepper fried in peanut oil! mmmmmmmmmmmmmm

I actually tried the mustard thing Friday night, and it became my new favorite. I recommend taking a couple of filets and trying it before you cook a bunch that way, but I thought it was outstanding. Didn't really tate the mustard like I thought you would but it gave it a tang and gave the batter a thick crisp that I really loved. Mustard coating + corn meal, salt, pepper, Tony's. Awesome.

Drain Fillets and cut into nugget size pieces. Dip the nuggets in an egg wash and roll in Kelloggs Corn Flake Crumbs. Let the Fillets rest or dry for a few minutes and give them a bath in hot peanut oil. Crunchy GOOOOOOOOD! You will find the corn Flake Crumbs in the baking isle. Walmart does NOT carry them.

Season up and let sit for couple hours.Drain roll in flour,
dip in egg and milk wash, then roll in Panko bread crumbs, let set
for alittle while before deep frying.The outside is very crisp.
You have to season first. The Panko is very plain, but is very
crispy. My grandkids love it!

I dry it, roll it around in the mustard, get it all gooped up in the mustard. Then roll it in the corn meal. It will form a pretty thick layer. After it fries to golden brown, there was just a thin layer of yellow between the fish and the batter, but again, doesn't taste like mustard really. Just adds some nice zing and a crunchy texture with the thick batter.

in a lrg bowl mix aprox i cup mustard with 2 or three table spoons of louisiana hot sauce dip fish in mixture coat evenly then dip fish in louisiana fish fry (blue bag) or insatant mash potatoe flakes and fry till golden brown.

Dry it, Louisiana fish fry original, and fry them puppies!

Also, SlabMeSilly, I believe, has a recipe for baked crappie covered in sunchips, cheese, and dried...err...cranberries? I think it was. It was AWESOME!!!!! Basically bake the crappie with cheese on the fillets and crumble your choice of flavored sunchips on top. Then put on the fruit. I left off the fruit because I did it with the salsa chips, and I didn't know how that would taste.

Baked Crappie,
Really easy fix..
Make a bowl with tin foil, (as big as about 4 filets), put 4 pats of butter in the bottom, apply the filets then squeeze some lemon, salt and pepper.. Close the foil up around the filets and put them on the grill or bake them for 20 minutes at 375.. (If baking put them on a cookie sheet.)
After cooked remove from heat open and eat, nice thing is the clean-up, roll up the foil and throw it away, dishes done...

Old Cajun recipe..

1 onion
1 bell pepper
1 stalk celery
(all diced fine)
1 stick of butter
1 small can of Evaporated milk
handful of diced up Velveta
Tony Cacheries or equivelant or salt and pepper
about a pound of shrimp or crawfish tails

Melt butter in pot, and add diced up veggies...cook til veggies are tender.
Add shrimp and cook for a few minutes
Add the can of evaporated milk and cook until shrimp are tender
Add the handful of chopped up Velveeta cheese
put fish in a baking pan and sprinkle with Tony's or spices you prefer

pour cooked mixture over top of fish

Cover with Aluminum foil, and cook in oven until fish is done

add a little shredded cheddar cheese on top and let melt uncovered for a few minutes.....

Then pull out the forks and dig in...

This should feed 5 or 6 people..... I used about 14 filets

Baked Parmesan Crappie

Ingredients

1 or 2 eggs
¾ cup Panko Italian or any bread crumbs
¼ cup Parmesan cheese
¼ teaspoon ground dried thyme
Fish filets
¼ cup melted butter

Directions

1. Preheat oven to 500 degrees

2. In a small bowl prepare an egg wash. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the filets in the egg wash and then press into the crumb mixture to coat. Place filets in a glass baking dish, and drizzle with melted butter.

3. Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Quick, easy and delicious.

Some of those sound like work! :-)
I'm gonna try those, get some variety.

Love this stuff! I have tried 20 or so different coatings and seasonings. This has just a hint of lemon. REALLY accents the crappie. +1 on the hot peanut oil.

Skillet crappie: lightly coat fillets in Italian bread crumbs, no seasoning needed. Melt 5-6 pats of butter in skillet, medium/high heat, brown fillets 4-5 minutes on first side, turn and sear for 4 minutes. Melt in your mouth.

For an added crunch for fried fillets, like the corn flake crumbs Dutch mentioned, add instant potato flakes to the corn meal or Zatarains.

As tasty as these critters are, this topic could really use sticky status. I'm trying Longhorn's Baked Parmesan Crappie tonight. I've always fried them. No complaints about fried crappie filets (there's not much better tasting than that) just trying something different this time.

This one is very good.

What You Need
1/2 cup KRAFT Sun-Dried Tomato Dressing
2 Tbsp. fresh lime juice
4 tilapia fillets (1 lb.)
2 large tomatoes, chopped
1/2 cup pimiento stuffed green olives, halved
3/4 cup KRAFT Mexican Style Finely Shredded Cheddar Jack Cheese
1 Tbsp. chopped cilantro
Make It

HEAT oven to 400°F.

MIX dressing and juice. Place fish in 13x9-inch baking dish; drizzle with 1/2 the dressing mixture. Toss tomatoes and olives with remaining dressing mixture.

BAKE fish 20 min.; top with tomato mixture and cheese. Bake 5-8 min. or until cheese is melted and fish flakes easily with fork.

SPRINKLE with cilantro.

Serving Suggestion
Serve with hot cooked rice and steamed fresh vegetables.
Shortcut
If using frozen fish, no need to thaw before using as directed.
Substitute
Prepare as directed, using halibut or cod fillets.

I have not been able to find the sun dried tomato dressing so I just take 1/2 cup of a mild picante sauce, add 1/4 cup vegetable oil & some cilantro to make my dressing. The only other thing I do different is put some chopped onion on top before I put it in the oven. Y'all are gonna love this recipe. Be sure to wait on the olives, tomatoes & 2nd half of dressing mixture & cheese for the last 5-8 minutes

This one is good too. I have had this one with sand bass, hybrids, striper, chicken, quail, pheasant & chucker.



Soak meat at least 6 hours to overnight:


heavy whipping cream
1 1/2 CUPS


seasoned salt
1/2 teaspoon

garlic salt
1/2 teaspoon

Worcestershire sauce
2 tablespoons




Take meat directly from cream and coat as heavy as possible with the


following mixture, place meat on lightly oiled baking pan.


Sprinkle with remaining cracker mixture over meat in pan and


drizzle with 2 tablespoon melted butter. Bake for 30 min.




finely crushed club crackers
1 cup


parmigian cheese
3/4 cup


seasoned salt
1/4 teaspoon
garlic salt
1/4 teaspoon

onion salt
1/4 teaspoon

celery salt
1/4 teaspoon

pepper
1/4 teaspoon

One of my faves:
Pour 50/50 mixture of white wine and olive oil in a cast iron skillet up to about 1/4 inch. Take as many crappie filets as will fit in skillet and coat them on one side with pesto. Lay them gently in liquid taking care not to splash the pesto off. Sprinkle with salt/pepper and lay a few purple onion slices/rings on top. Cook at 400 degress for bout ten minutes. Serve over rice a roni or plain rice.

blackened crappie fillets

small amount of olive oil in skillet, cover fillet in blackening seasoning drop in oil(preheated) as it cooks the fish will turn a whitish color from the outside edges and work its way in as it gets done. When the white has moved about half way in then flip the fillet and finish off. Serve with steamed brussel sprouts and a salad.
I love fried fish but I like trying to eat healthier with the spoils that my god and given me!

Thumbs up for Longhorn's Baked Parmesan Crappie. Still love fried, but the BPC was a tasty alternative...healthy, too, if you leave out or substitute the butter.
