after one last wash i let them air dry just a little
then salt lightly.
i still like a very light coat ofyellow coacorn meal
i learned from a tv cooking show to let any fried food drain in a wire basket into a bowl.
not on paper towels for cleaner taste

Chipped Crappie:
- mix in a little lemon juice into about 1 cup of mayo...just to thin the mayo down a little
- crush up some potato chips (not corn, as they get soft in the oven) of your favorite flavor
- dip fillets in the mayo mix and then roll in the crushed chips
- bake at 350 until chips start to brown
- change up chip flavor to change up the overall flavor

I add dill weed and dill pickle relish to the Mayo and I put Mayo and chips only on the top side...No complaints yet

Serving Suggestion
Serve with hot cooked rice and steamed fresh vegetables.
Shortcut
If using frozen fish, no need to thaw before using as directed.
Substitute
Prepare as directed, using halibut or cod fillets.

I have not been able to find the sun dried tomato dressing so I just take 1/2 cup of a mild picante sauce, add 1/4 cup vegetable oil & some cilantro to make my dressing. The only other thing I do different is put some chopped onion on top before I put it in the oven. Y'all are gonna love this recipe. Be sure to wait on the olives, tomatoes & 2nd half of dressing mixture & cheese for the last 5-8 minutes



A+ this was delicious.....gave my mom some filets and this recipe....great stuff!

tried 4 of the recipes listed here tonight (I was multi-tasking my a** off!). Blackened crappie was the favorite of the night: Taco Seasoning/Black Pepper seasoning, pan fried in melted butter.

Crappie toast toppers!
Cook your filets in the microwave until they flake apart. Mix in a can of aready heated up cream of mushroom soup. Once it is all nice & warm, spread ontop of some Texas Toast. I turned my nose up when my stepmom explained what she was making. How dumb I felt when I ate it. Great break from frying!

Can't beat salt and good ole corn meal. But love the mustard batter on catfish.
