I've occasionally picked up a dozen Hill Country tamales at HEB, and thought them edible. Today, though, in the deli section of one of the larger stores, I saw a display of Chef Prepared Foods tamales. They were huge, half a dozen weighing a pound and 9 oz. There were 4 or 5 different types, and I picked the pork. They were delicious, even the masa having a remarkable texture and flavor.

Uhm, hmm I made a mess of them once, with deer meat, under the expert guidance of a Valley Gal. Never again. Took a whole day just to clean the kitchen up.

Anyone who wants to make their own I highly recommend this site -
www.sonofthesouth.net/tamales

I tried another recipe once and didn't like them. This one was posted here a couple of years ago, and I have made them three times since exactly to the instructions. Everyone who has tried them has said they are the best they have ever had. They are not made with lard and very little fat in the meat so are relatively healthy. It is easy to follow with complete step-by-step instructions and pictures. It does take some time but they are worth it.

If you like tamales then you need to try Delia's. This place is amazing. They have 5 location in south Texas and now a web site and they ship all across the United States. Check them out at www.deliastamales.com

I work at a plant where we have several hispanic employees that bring homemade tamales for sale weekly fo 9.00 per dozen. I brought some deer jerkey to work one day and had two of them want to trade jerkey for tamales.I have ben swapping them 1 lb. of jerkey for 2 dozen tamales about once a month. It is better than buying them from a store any day.
