Anyone know how this clip on thermoter works? It seems like it will get in the way of the basket any way I clip it...almost seems dangerous.

Don't use it while cooking. You can use it for heating and then checking temps Inbetween loads of fish. Don't overload the fryer or it'll drop the oil temp too much which will make the fish greasy.

fish fry sounds good ... got 20# of wings thawed out ... fixin' to fry'um & then add the lous'ana hot sauce mixture

BTW anybody here from the Post or Lubbock area, count yerself invited to the Tower Theater in Post ... 7:30-whenever ... plenty of brisket, hot wings, & sausage ... plus all kinds of finger food ... oh yeah a "LIVE" dj also ... fun food & fellowship ... no booze

+1, 360-375. Any cooler and it will take too long to cook and the fish will sop up a bunch of grease. The hotter grease sets the meat up quicker and keeps it from absorbing too much oil. Makes the breading crispy faster too.

wings are done!!! ... i prolly told ya'll our son & daughter in law live in midland ... just a 2 hour drive grin that ain't bad for west texas!!!

I guess I will have to try it another time. Fish was good but only had 2 people show up when I invited about 30 directly not including the last minute open forum invitation.

I've never checked the temp w a thermometer. I use the bread test- get a
1inch x1inch piece of bread drop it in the hot oil. It should get golden brown in 60 seconds.
