HI- New to keeping fish. I cooked up my first batch of crappie last week, Yummy. But I am not sure that I used the right kind of oil to fry them, used a vegatable oil? Is that the stuff to use? I know there is so many kinds of oil...
Any tips on cooking up crappie would be welcome. thanks...

Canola oil is the healthiest but don’t heat it above 400 degrees. If you use peanut oil make sure no one is allergic to peanuts. I love fried fish but the calories are high. I learned this receipt from an older Cajun woman and its great. Soak filets in cold water for an hour or so. Pat the filets dry with paper towel. Dredge filets in WHITE cornmeal that has been seasoned with pepper, season salt, and lemon pepper and fry. You will be amazed at how little oil soaks into the fish as opposed to an egg wash/ yellow cornmeal batter.

veggie oil fries just fine, but pnut oil has a higher smoke point which means you can get it a little hotter. just try it all till you find what works for you. remember, if you reuse your oil to always strain it and only use it for fish after that. you can mix new oil in to prolong the life of the old oil.

Peanut oil is OK but I use corn oil adds a nice taste. But if you really want a good piece of fish fry in lard.

I use rice bran oil, but any cooking oil will do other than olive oil. It's all good.

Been reading a lot about grape seed oil. Supposed to have a higher flash point than veggie oil, but less than peanut oil. The stuff is supposed to be good for you when you use it to fry. Anyone tried it? Any input?

grape seed oil is good, but i think it's a little too expensive to fry with. it would be good on salads or sandwiches.

Anyone tried it? Any input? Are you sure you don't mean rapeseed oil? Rapeseed oil is the same as Canola oil. Canola is just the marketing name.

If you simply MUST fry them, fresh peanut oil seems to work best for me. Dont use that gallon of oil that's been sitting on the garage floor for a year, though. Get some fresh oil. Old oil sucks...unopened or not. I've been known to use a mixture of peanut and canola oil...about 50/50. The fish turned out good. My fried panfish recipe I rarely fry fish now. I prefer it grilled. Try this one some time too. Cajun Grilled fish recipe
