ive never made any before, and i would like to give it a shot.

only problem is... i have no idea what im doing.
could anyone give me a brief step by step?

Fill whatever container/soup pot you have about 1/2 with dry maize, or whatever amount you are planning to make, but no more than 2/3 full.
Cover with 3 inches of water.
Soak the maize for 24 hrs; if the water isn't still covered make sure there is at least 1/2 inch covering.
Add a few tablespoons of salt. Some add more, some less. Of you are going to spice it up you can add hot pepper flakes, chili powder, or such at this point.
Boil for 45 minutes.
Pour/ladle into you storage containers and put in flavor. As it cools it will absorb the flavor.
That's it!

Here's what I do-
1. Soak the corn for 24-36 hours.
2. Boil it for 30-60 minutes (Keep stirring and checking for the right texture/softness).
3. Let the water reduce below the level of the corn (KEEP STIRRING!!)
4. Add your flavoring- STIR STIR STIR!!
5. Let the liquid reduce to near nothing. Did I say STIR?
6. Put it in a Ziploc Bag and let it settle in there- That'll help your flavor soak in, and will let it get softer.

I usually let soak for 24-36 hours (like Chad)
I boil for 40-60 minutes and keep stirring to avoid burning some of the corn
Pour all contents through a strainer
immediatley put into your container and add your flavoring.

I generally make some tutti fuitti, anise, some other kind of fruitti smelling stuff.


I also get creative sometimes and add different flavors.
such as...molasses, chili powder, orange extract, scopex, butter scoth, vanilla extract, peppermint extract, cherry, I have even done BBQ sauce.

The best for me has been tutti, peppermint, anise, and cherry

Strawberry is a good all around choice. You might also try Chili powder as a flavoring next time. Both seem to be good winter flavorings.

ive never had any luck adding salt or flavors before or during boiling. for some reason everytime ive ever added salt before boiling, the corn never softens, no matter how long i boil it for. im also too impaient to soak overnight so i just boil it for about 2 hours covered on high which normally gets it to my liking. then ill add salt, flavors and whatever the hell else and simmer it to reduce it down a bit then let it settle and cool. gotta make sure to keep adding whater during the boil tho....

I just put mine in a pot and cover with water and boil for an hour. Then I add flavoring and let it sit over night. I usually use cherry kool-aid for flavoring. I have done well on strawberry and also on strawberry chili mixed.

Put the leftovers in the fridge. Keeps pretty well. Check it before the next trip for freshness. Sometimes the nasty spoiled stuff works. I just don't use it.

After it's soured you can still catch on it, but you might catch more cats. I've done well on buffs with nasty slimy soured sweet corn before.

If your maize starts to truly ferment and smell alcoholic, definitely save it and fish with it, some carp fishermen swear by this.

yup i had some that had green and blueish mold on top but under that it was a slimey yellow, that stuff was killer till my mom made me throw it out..

Chad had some on a trip to Emma that had live maggots in it. It caught fish too. Guess the extra protein made the difference.

i use weveils in my method mix, i tend to get alot of them in the crack corn, i just roll with it.
