EASY CHOCOLATE PIE

6 sm. Hershey chocolate bars (with or without almonds)
15 lg. marshmallows
1/2 c. milk
1/2 pt. whipped cream
Baked pie shell

Melt chocolate bars, marshmallows and milk in double boiler. Cool to room temperature. Fold in whipped cream. Pour in baked pie shell. Refrigerate.

CLASSIC CHOCOLATE PIE

1 single pie crust (this is an open-faced pie)
1 stick butter
1 cup sugar
2 eggs
3 Tbsp. evaporated milk
2 squares/ounces baking chocolate (unsweetened)
Whipped cream

Bake the unfilled pie shell for 5-10 minutes at 450 degrees, until it’s starting to firm up a little but isn’t cooked through. Melt butter and chocolate in a saucepan. Add the other ingredients (minus the whipped cream) and mix; you can do this in the saucepan.

Add the eggs last, so the melted butter and chocolate have a chance to cool and the eggs don’t scramble. Pour the filling into the pie shell. Bake for 30-40 minutes at 325 degrees, until the filling is set. Test it at 30 minutes, but it usually still needs another 5-10 minutes. When it’s no longer jiggling in the middle, it’s done.

Top with homemade whipped cream.

Here is my Grandmothers recipe from back in the 30's.

Grandmothers Chocolate Pie.

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 cup sugar
1/3 cup cocoa
1/3 cup flour
2 egg yolks
1/2 cup milk
2 T butter
1 t vanilla
1 pie crust - baked
In bowl - mix sugar, cocoa, flour, eggs and enough milk to mix. In pan - (she used a cast iron frying pan for this)
put in remaining milk and heat - add a portion of the heated milk to ingredients. in bowl - mix - then put all ingredients. into pan with heated milk. Cook until thick - add butter and vanilla - pour into baked pie shell and let cool. Top with meringue.
Meringue -
whip egg whites until foamy. Add 2 T sugar gradually - beat until stiff. Spoon on top of pie.
Bake @350-400 for 2-3 minutes or until starting to brown.

Found this one online and it's terrific.

Luby’s Cafeteria’s Chocolate Icebox Pie

Ingredients
• 2-1/2 cups milk, separated
• 1-1/3 cups granulated sugar
• 1/4 cup unsweetened cocoa
• 1 tablespoon butter
• 7 tablespoons cornstarch
• 6 tablespoons water
• 3 extra-large egg yolks
• 1 teaspoon vanilla
• 1 cup miniature marshmallows
• 1 9-inch baked pie crust
• sweetened whipped cream (I use Cool Whip)
• chocolate curls or chocolate shavings

Directions
1. In medium saucepan, combine 2 cups milk, sugar, cocoa, and butter.
2. Bring to a boil over medium heat.
3. In a medium mixing bowl, mix cornstarch and water until cornstarch is completely dissolved.
4. Stir in remaining 1/2 cup milk.
5. Whisk in egg yolks and vanilla until well blended.
6. Gradually add cornstarch mixture to mixture in saucepan, stirring constantly with a whisk.
7. Cook, stirring constantly, for about 2 minutes or until mixture is thickened and smooth.
8. Add marshmallows and stir until marshmallows are melted and mixture is smooth.
9. Pour into pie shell.
10. Press plastic wrap directly onto filling. (This prevents the formation of a tough, dry “skin” while cooling).
11. Refrigerate at least 2 hours.
12. Remove plastic wrap and top with whipped cream.
13. Garnish with chocolate curls.

To make chocolate curls, shave from a chocolate candy bar using a potato peeler.

I found this recipe at allrecipes.com. They usually have pretty good stuff on there. Looks elegant delicious but simple to make at the same time.
Here it is:

French Chocolate Silk Pie

Ingredients

1 Pillsbury® refrigerated pie crust, softened as directed on box
3 (1 ounce) squares Hershey®'s unsweetened chocolate, cut into pieces
1 cup LAND O LAKES® butter, softened (do not use margarine)
1 cup sugar
1/2 teaspoon vanilla
4 pasteurized eggs or equivalent fat-free cholesterol-free egg product
1/2 cup sweetened whipped cream
Chocolate curls (optional)
Directions

Heat oven to 450 degrees F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until light golden brown. Cool completely, about 30 minutes.
In 1-quart saucepan, melt chocolate over low heat; cool. In small bowl with electric mixer, beat butter on medium speed until fluffy. Gradually beat in sugar until light and fluffy. Beat in cooled chocolate and vanilla until well blended.
Add eggs 1 at a time, beating on high speed 2 minutes after each addition; beat until mixture is smooth and fluffy. Pour into cooled baked shell. Refrigerate at least 2 hours before serving. Garnish with whipped cream and chocolate curls. Store in refrigerator.

I have a easy Luby's recipe for this pie..they have a Drive Thru..
no one in my family does the baking thing...
