Green Tomato Relish
Ingredients:
8 C Green Tomatoes (cored and chopped, I remove some of the larger seeds but not all.
2 C Onions ( chopped)
2 C Jalapenos (desteemed, seeded and chopped, Green Peppers can be substituted)
1 1/2 Tbls Kosher Salt
2 1/2 Cups Sugar
2 Cups White Vinegar
1/4 Cup Apple Cider Vinegar
2 tsp Mustard Powder
1 Tbls Mustard Seeds
1 Tbls celery Seeds
Directions:
In a large mixing bowl combine squash, onion, and peppers. Add salt, mix well and let stand at least one hour ( I refrigerate mine overnight). Drain juice. Bring all other ingredients to a boil. Pour over squash mixture, put in jars, seal. Process in a boiling waterbath for 10 minutes. Remove and let cool. Chill at least 24 hours and enjoy>
Makes 6 pints.
