1 - 12 oz. packages of whole cranberries
Make to recipe on the package - 1 cup water, 1 cup sugar bring to a boil and add cranberries. Return to boil then simmer for 10-mins with no lid.

While cranberries are cooking chop up the following:
1 Tbls fresh cilantro
2 green onions, stem and all
1 jalapeno pepper, you can de-seed it if you want or not.

When cranberries are done, pour them in a strainer over a bowl and start mashing the berries with the backside of a large spoon, scrapping off the underside of the strainer frequently to the bowl. Do this until you have about 1-1/2 spoonfuls of mash left, then mix it well into the sauce in the bowl. Let it set until room temp then stir in the chopped ingredients and put it in a mold in the refrigerator to jell.

Makes about 4 cups.

That's my families favorite and request it every year. I make one for X-Mas for my prime rib roast that I cook the cranberries as above and then add 2 Tbls. Horseradish to it.
