Does anybody have any experience with these? I know they're for sand, but do you think it would work for carping to protect from sun?

It should work just fine. Most guys use a brolly which is basically a large umbrella. As long as you can stake it down on windy days.

the description says it comes with stakes, so you should be able to use it anywhere that you can drive a stake into the ground.

Bought one of these Lightspeed Tents at Costco early in the year for ~$37. Super easy to set up AND fold up, packs to about the size of a large folding camping chair. Has stakes and weight pouches for windy days. I chose this over a sportbrella type sunshade for the smaller packed footprint, all my gear has to fit in a Grand Prix trunk haha! Maybe you could still pick one up at your local Costco.

I have the bfs one and it works great. It kinda sucks in the summer because it has no air vents but there are versions that do(and I'd recommend one of those)

I have a sportbrela from sams, use it on the bank with the stake or in the boat stuck in one of my vertical rod holders, a "reel" life saver on the river when its 100 outside.
