Grilled Catfish Recipe?

I think I'm going to grill some Catfish this Weekend. I normally only eat fish fried but I want to give it a shot. What are some of Your favorite recipes? Thanks in advance.

i made some stuffed catfish fillets for me and the wife one night that tasted great. seasoned them with salt and cayenne. made a stuffing with shrimp, about a pound, half of it i course ground in my food processor, the other half cut into chunks and mixed them together with some egg, green onions, garlic, cracker crumbs and texjoy cajun seasoning. put the fillets on a baking sheet, topped with stuffing and baked at 350 for 20-30 min. next time i will mix in some crawfish tails.

One thing me and my wife like to do is take some aluminum foil. Place a couple of catfish fillets in them. Put in a couple of large hunks of butter, some salt and pepper, a little lemon or lime juice, quite a bit of cayenne pepper sauce like Frank's, a little diced up garlic if you like. Fold the foil up but leave the very top of it open. We place them on the grill and add a chunk of mesquite or pecan wood and close the grill up so the smoke can get down into the foil to the fish while the fish broils in the mixture. Keep an eye on it and when the fish flakes with a fork it is ready. This is now one of our favorite ways to eat fish. A lot lighter meal even though we still love our fried fish. This works with a lot of different fish like talapia, trout and others.

I grill my catfish by leaving the skin on. I lightly coat both sides of the fish in extra virgin olive oil. Season with tony Cs, lemon peper, and garlic salt. Seasons first and only on the meat side, and massage it in. Let it sit while the grill gets up to temp. Then coat the oil on both sides of the fish and some on the grill grates. Cook skin side down. Serve skin side down as well. Eat with a fork and eat the meat right off the skin. Don't eat te skin.

I also made it lighter by using butter flavored cooking spray. Also added some cayenne and used regular pepper lemon juice rather than lemon pepper. Very delicious.
