We made it this week and it turned out great,I thought I would share it with y'all, just brown the beef and onions together, throw the beef and onions and all the other ingredients in the crock pot on low and let it go all day. food enjoy


Ingredients
2 pounds ground beef
2 cups diced onions
1 (32 ounce) box beef broth
2 (15 1/2-ounce) cans pinto beans (drained and rinsed)
1 (15 1/2-ounce) can cannellini beans (drained and rinsed)
1 (15 1/4-ounce) can whole Mexican- style kernel corn, drained
1 (14 1/2-ounce) can Mexican-style stewed tomatoes
1 (14 1/2-ounce) can diced tomatoes
1 (14 1/2-ounce) can tomatoes with chiles
1 (4 1/2-ounce) cans diced green chiles
1 (4.6-ounce) can black olives, drained and sliced, optional
1 (1 1/4-ounce) package taco seasoning mix
1 (1-ounce) package ranch salad dressing mix
Corn chips, for serving
Sour cream, for garnish
Grated cheese, for garnish
Chopped green onions, for garnish
Pickled jalapenos, for garnish

Directions
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a crock pot. Add the beans, corn, tomatoes, green chiles, black olives, taco seasoning, and ranch dressing mix,add beef broth to cover,and cook in a slow cooker on low for 6 to 8 hours. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, green onions and jalapenos.

It will almost fill up the crock pot, probably 1 to 1 1/2 gallons.

I make one very similar...i'll have to try your version to..thanks for posting....here is mine:

1-2 lbs lean ground beef
1 diced onion
2 cloves garlic

1 can Kidney beans
2 cans Pinto beans (with or w/o jalapenos)
1 can Mexi corn or Fiesta corn
1 small can chopped green chilies
1 large can petite diced tomatoes
3 cups water
1/2 cup Ranch dressing
1 Tablespoon chili powder
1 tsp cumin
1 tsp oregano
1 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
salt and pepper
1/2 tsp cayenne
1/2 tsp red pepper

Brown ground hamburger meat and drain grease...add onions and garlic and simmer until onions are cooked.
I put the rest of the ingredients in a crock pot or on the stove adding the ranch while its still cold. Then added the hamburger mixture to it.

We top with : crushed tortilla chips, diced onions, diced tomatoes, chopped blk olives, sliced avocado and cheese.

Made this tonight. Combined the two recipes using what I had on hand and leaving some things out - like oregano, cayenne, paprika, and red pepper flakes. Wife has some indigestion going on right now. Cooked it on the stove top for a couple of hours. It was really good - topped it with cheese, avocado, and chips.

We did a combo of ours and some things above and Mmmmmm!
