King Ranch Chicken Casserole...

Ingredients:
1 large Onion chopped
5-6 large Jalepenos destemmed deseeded.. chopped
2 Tbls Butter
2 cups cooked chopped chicken
1 (10 3/4- oz can cream of chicken soup)
1 (10 3/4- oz can cream of mushroom soup)
1 (10 oz can Ro-tel diced tomato and green chiles
1 Tbls Chili Powder
1/4 tsp each groung cumin, salt, garlic powder, fresh ground
black pepper
12 6" corn tortillas
2 cups shredded cheddar cheese

Directions:

Saute onion and jalepeno in butter for 5 mins till tender.
In a large bowl add sauted onions and japs.. add chicken and next 8 ingredients. Mix well.
Tear or cut tortillas into 1" pieces.
Layer 1/3 of tortillas on the bottom of a 13x9 baking dish
Top w/ 1/3 chicken mixture & 1/3 cheese
Repeat twice....finishing with cheese
Bake @ 350 for 30-35 mins. till bubbly.



Wish I had some of MP's salsa to top it with!!
