Doing a fish fry in a week and a half and need a liquid batter recipe. I use to make a batter with beer, flour, and mustard but it has been a while. Batter works good in the deep fryer which I will be using. For pan fried I prefer a dry mix.

I use "dry mix" for pan and deep fryer...

..but, a good batter can be made with Bisquick, beer, and Tony's seasoning. Not a true recipe - just got to mix till you get your preferred consistancy.

Someone on this forum told me to try McCormick's Fish and Chips batter. I did and it was great.

AP flour, tsp baking powder, salt, (any other seasonings), and beer (or milk if you dont like beer batters).

I like store bought beer batter. Add tobasco, mustard, salt and pepper.

I tried one of those Japanese batter mixes once. You mix it with milk and then chill it before using, as I recall. I think it's a rice flour product. Came out great--the batter swells some and gets a little crunchy. Kind of messy, though.

I use a cup of flour with about a tablespoon of baking powder in it and salt and pepper. Pour a beer in and mix it around. Cut it with buttermilk until you reach the correct consistency. You could put it in a food processor to insure that you're really getting a lot of air in the batter. That's what makes it light. After you're dredged your fillets chill them in the ice box for about 30 minutes to let the batter set up. Personally, I just use a dry batter.

The best ever beer batter i've ever made was

1 cup flour
2 tsp salt
1 Samuel Adams Coastal Wheat beer

I used nearly the full bottle (maybe an inch was left) until i had the right consistency.

It's a little late for your post...but for next time.......

Alton Brown of the Food Network in his "FRY HARD" series has a good wet batter that I have used. It is on YOUTUBE. Keep the batter cold before you dip and fry. Beer is good but I like soda water as well. A bit of sugar helps the batter turn golden brown if it is too light when you use soda water.
