Walleyes are probably the best tasting fresh water fish, even better than crappie.

Kev, there is a place in Dallas - Tei Tei Robata that used to have a special part of the cheek meat of some special Tuna that was $600 for a single order!

I thought I'd like to try it if I ever won the Lotto!

Anybody know where The NightFisher works at? Adrian and I would love to go try some of his creations.

True, but the same can be said for salt water fish, especially warm water fish. Fish that suspend near alot of grass like the sunfish family (crappie and LMB) are more likely to carry parasites. Open water fish like the striped bass, are less likely to contain parasites. Parasites are nasty, but they are totally harmless to humans. Just check your fish and use some common sense, youll be alright.

Colder water is generally less risky. There's always that risk, even with saltwater fish. The risk is greater in freshwater, and the warmer the water, the higher the risk. Probably the further north towards Canada the walleye came from, the better chance it's safe.

Still a higher risk then saltwater, but, either way, that looks great! As usual for you, Nightfisher.

My son and I made sushi with crappie this year and didn't even think about the risk until after we ate it. It was delicious by the way but I won't do it again.
On the other hand, I spend a fair amount of time near Galveston and all my friends there eat trout and redfish regularly that is loaded with worm like parasites in the flesh. I looks gross to me but they just act like it's not there and suffer no ill effects. Why would any other parasite be different. Wouldn't we digest it?

It depends on the type of parasite. Some are "Designed" for lack of a better word, to be eaten, survive the early digestion process unscathed, and then attack the intestinal lining and/or lay eggs. Fill ya up with worms, lol.
