Am hungry for some CF. Mary's in Strawn makes the best I've every had including that which I've made myself. I looked her up on the internet and found that her recipe is a closely guarded secret. However, it did reveal that they cook the steak on a griddle and not in hot oil like most of us do. If anyone has further info on this post it. I want to try to cook some like she does because it is excellent.

If you can figure out how to keep the breading on the meat I don't see why you could not cook it on a grill. I am guess you mean the fry cook solid sheet grill and not a charcoal grill.

Just dredge in seasoned flour I'd think.

Hmmm.. I've never had Mary's cfs, which everyone seems to love. I have to wonder how long you could keep it on the griddle without burning the crust and still cook the steak through?

That must be the secret! LOL

You can do it in a skillet with Pam spray. The Pam keeps it fron sticking and it is easier to get the spatula under so you don't break the crust. Works great.

One thing I tried was parmesan cheese and bread crumb coating instead of the normal flour. Turned out PDG.
