Sometimes I like mine fried with the skin on sometimes I prefer fillet them with out the skin. I was just curious how do you like yours?

Fried in rice bran oil coated in coarse corn meal.

I like with skin off, instead of corn meal I put ritz crackers in a food processor and turn them into dust and then fry no need for any salt just some black pepper it gives the fish a real good butter taste
