1 9" deep frozen pie shell
1 4oz can of hatch green chile diced
1 C half and half
1 pre-baked skinless chicken breast cubed or shredded.
1/2 C finely diced onion
3 eggs
3 C shredded cheese divided (I use the 4 cheese mexican blend)
1/2 t Salt
1/4 t black pepper
Heat oven to 350.
Place the empty pie shell in the oven for 10 minutes and remove.
Place 2 C of cheese in the pie shell.
Layer the onion chile and chicken evenly over the cheese.
Beat the three eggs and add the half and half, salt and pepper, mix and pour evenly over the ingredients in the pie shell.
Top with the remaining 1 C of shredded cheese.
Bake at 350 for 60-70 minutes until firm and top is golden brown
