I don't remember who psted this recipe here originally but consider this a hardy THUMBS UP!
I cooked this recipe over the weekend and everyone raved. The only changed I made was I used Texas Gourmet Sidewinder Searing Spice instead of Paul Prudhommes.
Catfish Supreme
2 lbs Catfish fillets
Cajun Blackenening seasoning (Paul Prudhomes)
Hellman’s mayo
Butter
1 Cup Sliced fresh Mushrooms
½ Cup chopped Parsley
1 Cup sliced Green Onions
1 ½ pounds peeled and deveined medium Shrimp
2 cans Cream of Shrimp soup
Cayenne pepper and Louisiana Hot Sauce to taste
1. Season catfish well on both sides with blackened seasoning then spread a thin layer of mayo on both sides of each fillet. Cover and refrigerate for 1 hour.
2. In a large skillet heat 2 Tbsp butter until it starts to sizzle. Sear the fish fillets on both sides (don't cook all the way through) and remove to a large baking dish.
3. In the same skillet add 2 more Tbsp butter and then add the mushrooms, parsley and green onions. When this cooks down some add the shrimp. When the shrimp start turning a little pink reduce the heat to low and add the 2 cans of shrimp soup (the shrimp will finish cooking in the oven). Season to taste with Cayenne pepper & Hot sauce. Stir well to combine and ladle this mixture over the fish fillets.
4. Bake at 375 degrees for 30 minutes.

I normally don't care for baked fish of any type. However, I fixed this last night (used Cajun seasoning) and loved it. So did my wife (that's the important thing). Really good. I thawed a quart bag of filets, which didn't appear to be 2 lbs., so only used one can of shrimp soup with a small amount of sour cream mixed in to it to make it go further. Didn't have any fresh mushrooms so used canned ones, which was OK. Next time I'll use fresh, however, and will probably try it without the mayo. with even more green onions and parsley. Repeat - this is an excellent baked fish recipe and would probably be great with any kind of white fish including sand bass, striper, or hybrid.

This is really good, I substituted 1 can cream of mushroom and one can cream of tomato (for the cream of shrimp). Served over white rice with franks redhot sauce. yummi.

Have got to keep this one current. We cooked this again tonight, and it was even better than the first time. It is addictive! One of the best recipes for anything I've ever done.

I use only one can of shrimp soup and add a cup of sour cream and milk total together to it. It is not soupy this way. You can get the shrimp soup at WalMart for about $2.30 a can. I think it would be even better with the shrimp soup as opposed to the mushroom.

Don't forget the Hellmans , makes a big difference. Wholmes you should try it with the cream of tomatoe and cream of mushroom. I say it can't be beat. But I will try the shrimp soup next.

I found the cream of shrimp soup( campbells )at Walmart , is this what you are talking about.

I have made this several times using a quart bag of catfish filets. Pretty much follow the recipe except only put one can of shrimp soup in it. (Wal Mart is the only place I've found this soup after going to several different stores.) I add about a 1/3 cup of milk and sour cream to the soup, and it turns out about right as to consistency.
A great recipe.

Finaly got around to making this. Got to say this is one of the best I've had [ and I've tried a lot]. Used Redfish fillets instead of Catfish.
