Very nice pics there LKP. Now, being a relatively noob to this cooking/food forum, is this something you prepared yourself or something you googled? Dynamite Sauce (My Version)
1 Cup Japanese Brand Kewpie Mayonaise (You can use Regular)
1 Tablespoon Chili Sesame Oil (1 Teaspoon if too spicy)
1 Teaspoon Masago
Dash of Sriracha to taste
Green Onion Garnish

Masago Aioli Sauce (Recommened for scallops)
1 Cup Japanese Brand Kewpie Mayonaise
Masago or Tobiko

Spicy Mayo
1 Cup Japanese Brand Kewpie Mayonaise
1 Tablespoon sriracha
1 Teaspoon Sesame Oil

Apply any of these basic sauces to any seafood dish like mussels, oysters, fried shrimp, crab cakes or scallops.

Do you use shrimp roe in your xo sauce? I can't find it anywhere. I have all of the thai peppers, etc. Just can't find the shrimp roe.I have been wanting to make xo for a while now.

No, there is no shrimp roe. Buy the XO sauce from the asian markets. SHould be about $10 for 4oz.

Shrimp roe is not necessary because it is very hard to harvest or buy. The taste of shrimp roe doesnt even give off that much flavor except a fishy taste. You get most of the seafood taste from the dried scallops and shrimps. That recipe you post there is from the same recipe as Eileen Yin-Fei Lo's cook book. Save yourself alot of time and money and buy Lee Kum Kee's Premium XO sauce.

I will go out on a limb as someone who loves to cook and watches those cooking shows and say if your food tastes half as good as your presentations are you could definately do that show!!

Easy, make a brown sauce. Basically chicken stock, oystersauce and corn starch. All in ginger and some garlic if you want, maybee a little MSG. Bok choy and mushrooms COOK very fast so do not overcook. Make sauce girl and then put veggies in, let them cook for 2 minutes then transfer to serving plate.
