Very nice pics there LKP. Now, being a relatively noob to this cooking/food forum, is this something you prepared yourself or something you googled? If taken from another site, could you please post it or if you prepared these lovely tasty looking dishes, I personally would like to see the recipe. Much thanks in advance.

You're going to be one of my favorite poster here for sure, let's see, how about the dynamite mussel and scallops, looks lke some kind of mayo based and masago there. Hell, why stop there, feel free to post them all when you get a chance. You're making me hungry!

Dynamite Sauce (My Version)
1 Cup Japanese Brand Kewpie Mayonaise (You can use Regular)
1 Tablespoon Chili Sesame Oil (1 Teaspoon if too spicy)
1 Teaspoon Masago
Dash of Sriracha to taste
Green Onion Garnish

Masago Aioli Sauce (Recommened for scallops)
1 Cup Japanese Brand Kewpie Mayonaise
Masago or Tobiko

Spicy Mayo
1 Cup Japanese Brand Kewpie Mayonaise
1 Tablespoon sriracha
1 Teaspoon Sesame Oil

Apply any of these basic sauces to any seafood dish like mussels, oysters, fried shrimp, crab cakes or scallops.

Do you use shrimp roe in your xo sauce? I can't find it anywhere. I have all of the thai peppers, etc. Just can't find the shrimp roe.I have been wanting to make xo for a while now.

No, there is no shrimp roe. Buy the XO sauce from the asian markets. SHould be about $10 for 4oz.

2/3 cup shallots

16 steamed sea scallops(shreaded)
3/4 cup salt cured ham
1 cup dried shrimp
85 small thai peppers
6 tbs shrimp roe

Shrimp roe is not necessary because it is very hard to harvest or buy. The taste of shrimp roe doesnt even give off that much flavor except a fishy taste. You get most of the seafood taste from the dried scallops and shrimps. That recipe you post there is from the same recipe as Eileen Yin-Fei Lo's cook book. Save yourself alot of time and money and buy Lee Kum Kee's Premium XO sauce.
