Anybody ever smoke them? Good? Bad? Worth the trouble?

Season them up and then slow boil/simmer in beef broth until falling off bone, remove from pot and keep warm, cook some onions, red potatoes and cabbage in broth, serve with horse raddish sauce, pretty darn good, I have this recipe in Justin Wilson's cook book, you may be able to google it up, it is worth fixing.

Boil them for about an hour and then smoke um till the meat falls off the bone. They are good and meaty.

Personally I prefer smoked baby backs...

For a different twist on ribs, go to a mexican market and get some Tablitas and grill them hot and fast.

I get my tablitas at 4400 Hwy 377 in Benbrook. Its a shopping center and on the south end is a place called 1 Stop Mart or something like that. The meat counter is in the back of the store. Also have excellent beef and chicken fajita meat, guacamole and pico de gallo in the refrigerated display. Just ask the lady at the register. She will hook you up. I didnt care for the home made tortillas though.

If you go there be sure to eat at Pops Burgers and Grill. Its in the same shopping center.

Cook the tablitas on the grill over high heat. Doesnt take but a few mins each side.

Actually, yes, I have smoked them more than a few times. As with all the rules with beef, low and slow. Darned if I can remember any times... I would just start checking at about 4 hours.

Paprika, chile powder, cumin, salt, pepper, garlic and onion powder rub. On the inside curve of the ribs, there's a membrane kind of like paper. Pull that off before you smoke them.

Worth it, YES. My favorite kind of ribs. Just do it with a dry rub and slow smoke. To decide whether you want to try it for yourself, go to Riscky's Barbecue at the traffic circle at 377 / camp bowie or downtown or up in the stockyards and get the all you can eat beef ribs for $10. Note their mistakes and how you could improve it.

I hate to disagree, but Riskys has got to be the worst Q that there is! If he was to make a list of improvements he would run out of paper! grin

I didn't say get their brisket! Their brisket sucks. That's the only place in the metromess I know of that serves beef ribs though. Have theirs, realize its not as good as you can make it, and go tinker.

OK... I can honestly say that I have never had the ribs there. Maybe its worth a try.

But yes, the brisket sucks!

Also, all Fiesta's have them, and they're pretty decent. Each place has it's own version of marinade that they use, and some are better than others. So far the best I've liked are Super Mercado Monterrey on Berry and Super Plaza on Felix. Super Plaza's might be a little better but Super Mercado Monterrey has awesome fresh tortillas and this really spicy green smooth salsa that is awesome ( and that I would love to find the recipe for).
