Are there any good Buffalo carp recipes out there? I know it's a strange question, but I've aways been curious as to how they taste.

Buffalo - good stuff, especially the rib meat since it only has the big rib bones in it. Fried buffalo rib meat with your favorite seasoning mix fried to a golden brown.

Smoked Buffalo with some homemade BBQ sauce is a killer too or you can change out to garlic-butter with parsley and Lea & Perrins while grilling/smoking it.

I've heard of that before. Is that the only part of the buffalo that is worth eating? What about the fillet themselves? I always hear about the ribs, nothing about the fillets.

They're similar to salmon only more boney and you have to pull the pin bones out before cooking, but all is really pretty white meat.

Pressure cooker with 2 Tablespooons of Old Bay in 2 Cups of water for 45 minutes meat falls off the big bones and little ones are gone.
I've cooked small carp this way and it is very good, I'm sure Buffalo is also.

bake whole as you would any , i use lemon wedges ,onion, and epasote.salt and pepper bake uncovered in pyrex casserol dish . when cooked use a fork and go to town .the bones are large just pick and eat . great taste and texture

my grandmother would bake them then debone it and make fish cakes out of them..............they were soo good......wish i could go back in time and have her make me some more.....those were the days!

Interesting video. Was that a carp fillet he was scoring? Just fillet likea normal fish then score along the side? I may want to try this.

i have had carp soup and it was good ! .you can score a whole fish just as well and you will just have the middle bone to deal with . i have baked buff and they are very very tasty too

Thanks for the info. I'd also really like to try buffalo. I've heard people say they're good. Unfortunately I have yet to catch one. Guess I better get started giving it a try. From what I've heard the best time to catch them is before summer sets in.

yeah you scor the the meat, also you need to make sure the grease is super hot this "melts" the bones....up north when you go to a fish fry, your eating carp...I don't eat them but I have tried it in the past at a TPWD event and I thought it was great.

Also Brett in the rough fish section eats alot of buffalo he even cans it, says its much better then tunna or salmon from a can
