3 eggs 1/2 c light corn syrup 4 tablespoons butter (melted) pinch of salt 1 c packed brown sugar 2 teaspoons vanilla extract 1 c pecan bits plus 1/2 c. halves
Mix everything but the 1/2 c. of halved pecans, and pour into your pie crust. Decorate the top with the halves.
Preheat to 400. Bake for 15 min, then lower to 350 and bake for 45.

CHOCOLATE PECAN PIE
1 stick butter 1 c. white Karo syrup 1 c. white sugar 4 beaten eggs Pinch salt 1 tsp. vanilla 3/4 c. semi-sweet chocolate chips 1 c. broken pecans 2 unbaked pie shells
Melt butter and add syrup, sugar, eggs, salt and vanilla and stir well. Add chocolate chips and pecans, mixing well. Pour into 2 unbaked pie shells. Bake at 350 degrees for 30 to 40 minutes. Let cool thoroughly before cutting. If using aluminum foil pans, the crust will bake better if cooked sitting on a cookie sheet.

I doth protest the cost of pecans. Try using walnuts. A little cheaper and good tasting.

Pecans are free. All you have to do is pick them up. I protest the use of chocolate in a pecan pie. I'm a pecan pie purist!

I protest the use of crust in any sugary delight!

Pecans are free. All you have to do is pick them up. I protest the use of chocolate in a pecan pie. I'm a pecan pie purist! We picked out over 20 pounds of natives we got from a local park last week. We already had over 50 pounds. I use a "rocket" pecan cracker and Wifey and the kids get after it with the picking out and bagging. We have one more bunch of about 40 pounds to crack and pick out and we are through, but could pick up that many or more if we wanted. I like the KARO Classic recipe that is printed on the label. It calls for dark Karo. I also make the small pies or "tarts" when I can find the shells. We wrap them in Saran wrap and they travel well for lunches or trips.

We get ours from the tree in our back yard. Pies are better with free and fresh pecans. Thanks for the recipe Kattelyn.

Here's the recipe I like to use:
1/2 cup Light Corn Syrup 1/2 cup Dark Corn Syrup 3 eggs 1 cup sugar 3 tablespoons butter, melted 1 teaspoon vanilla extract 2 cups pecans - don't need to chop them or pre-toast
Mix corn syrup, eggs, sugar, melted butter, vanilla extract in a bowl. Put the pecans in the pie crust and then pour the wet mixture over the pecans. Put in the oven at 350 for about 50 to 55 minutes or until done.
Don't toast the pecans before you put them in the pie. They toast enough during normal baking, and if you pre roast them, they'll get really dark.

Oh, once you master this one, take out half of the pecans and add the same quantity of raisins, and add 1/2 teaspoon nutmeg and 1 teaspoon of cinnamon and you have Osgood pie.
