I spoke with a rep for Mrs. Baird's today and she is looking into having thier pit help as well, they have a huge 18 wheeler pit. Hope they are able to help out, they are committed on 12/9 but are free on 12/10 & 11. Keep your fingers crossed!

Hey guys...

Got an Email from Del a few minutes ago and he is asking for grills as well as smokers. So, if you dont have a smoker but have a grill, they need you too!

They need the grills for the hot dogs and burgers.

This was posted last night on Texas BBQ Rub website from Del.

"here is the lastest. We will not be aloud to bring outside meats onto the base. So no brisket. and you are now required to take a food handlers course.

All Food Handlers must abide by Fort Hood Preventive Medicine Food Handlers Guidelines. Anyone cooking or manning grills needs to have a 40 HOUR Food Handlers/Manager's Certificate ( card).
Anyone serving food must have the 4 HOUR food handlers card.
These cards need to be copied or scanned and sent to USO Fort Hood to have on file for the 11th of December . Scanned copies can be emailed to Isabel Hubbard at ihubbard@uso.org. If you choose to copy please fax your copy to USO Fort Hood at 254-768-2772.

I am working with the owner of the link below to work out a deal for $8.00 per person. They will give USO A PROMO COde for all folks needing the food handlers. I need to now confirm with Lucia Carter from Preventive Med that this will suffice. This food handlers will only be good on the installation.

There will be a power point class given at the base on Thursday and Friday by the preventative medicine group on base. I believe this will allow cooks, server, etc to be compliant with thier regs. I spoke with Del yesterday on my way home from work. Also, brisket is back on the menu about 5-7,000 lbs of it......

I will update as things "change". Don't give up, this happens everytime, and it ends up coming together. This was such a short notice deal that there was only 3 weeks to prepare for this huge event. Usually he has 4-5 months.

While we were talking he said we would be alot more "tightly packed than before, but didnt say anything about limited pits. I asked if he still wanted all the pits and he said yes. If this changes I will let y'all know.

I'm sorry y'all, but it's just not going to happen. Very frustrated right now.

Got this a minute ago.....

Food Service
We have reached our volunteer strength for our food service. Our menu will only consist of TYSON pre cooked products and Chopped BBQ from HEB Mobile Kitchen and the Carnival Food Booth Concessions that USO Bucks will pay for. I do not wish to introduce raw food of any kind into this venue. I appreciate all the generous offers to do so , however we need to be able to manage the food we already have donated. As good stewards we must try and use the food we already have committed and not have excess waste. With all servings that we have committed totals 185,000 portions. Unfortunately we will not be able to take advantage of the generous offer from BBQ for Troops. I truly hope USO has the opportunity in the future to work with them.

USO Fort Hood Volunteers
16 Wal Mart Food Handler Volunteers
3 Domino Pizza Volunteers
20 Gatesville Fire Department
USO Houston
16 Volunteers
25 Texas Beef Association

Total Food Pit Volunteer 80
you can forget it I have been told they don't need us.
