yes absolutely rub down...but you can get good result with injecting...i do both at same time...make your own using melted butter and water mix with favorite seasonings and inject ..when the bird is frying the water will evaporate but the butter will not it will spread out and mmm mmm good

make your own injectables ...or/and put a spicy rub under the skin and let it set overnight...mum mum good....
plain chicken thighs are great just season up the night before and drop in unbreaded ...they get so chrispy you wont miss the flour....

I have never liked fried turkey. I've tried it numerous times and I just don't like the taste. Everyone else will rave about how good it is and congratulate the cook. It just doesn't do it for me. I think it's the grease that I'm tasting. Old grease. New grease. It doesn't matter.

A couple years ago, I found the Big Easy, made by Char Broil. It gives you fried turkey taste with no grease. Same crispy outside. Moist and juicy inside. You can inject it with whatever you like. You can put whatever kind of rub you want. Cooks an excellent turkey. You can also use it for other meats. No grease mess to clean up, filter, or store.

My wife is from Louisiana. I tell my in-laws my Big Easy will out fry your pot-o-grease any time.
