I'm a "catch and eat" kinda guy and I caught my first carp this past weekend. Sucker was huge but I let him go as I have no idea how to cook one.
I've heard you can pressure-cook the bones until they're soft. Any tips ?

not too many carp eaters here , most of us are catch and release. If you do plan on keeping one I suggest one 10# and under. the older bigger fish store more toxins and the meat is very tough

I do hear that pressure cooked softens the bones, try it and let us know how it turns out.

One of my aunts used to pressure cook carp. After cooking, she'd make patties like you would with salmon. It wasn't bad.

I would say 5 lbs or under. Carp take forever to get big compared to most fish you eat and that is just more time to build up toxins. I would also not be very surprised to find out that the bones are a place where the toxins build up as well.

I prefer to catch bluegill on the side while I am waiting for a carp to bite. Throw the carp back and keep the bluegills for the frying pan.

My family never ate any carp but I know a lot of folks around here that do. I wonder if there's any studies showing instances of disease (cancer , etc. ) based on type of fish consumed. Might be a good thesis topic.

I guess I was just excited at the prospects. This fish was a good 2.5' long and all I could think of was "wow, look at the size of those fillets !" lizard

I agree on the 'gills but I'd rather have a good channel cat any day.
